Carlow College celebrated Race Equality Week this week by honouring the cultural diversity of our campus community – through the universal language of food.
Race Equality Week is an annual global movement designed to spark and renew hope, inspire programme, and maintain momentum in addressing ethnic inequality. It brings together organisations and individuals to tackle barriers to racial equity through collective action and meaningful engagement.
Throughout the week, the College Dining Hall served a selection of culturally inspired meals, chosen through student suggestions and prepared by Mary Broderick and the Carlow College catering team. Featured dishes included:
- Jollof rice (Nigeria)
- Musakhan rolls (Palestine)
- Aloo sabzi (Pakistan)
- Grey peas with bacon (Latvia)
This initiative was coordinated by the Equality, Diversity & Inclusion (EDI) Team in collaboration with Mary Broderick and the Carlow College Students’ Union, creating opportunities for the College community to celebrate its diverse cultural backgrounds.
Agnita Kenny, Chair of the EDI Team, said:
“Race Equality Week gives us an important opportunity to recognise, celebrate, and learn from the diverse cultural identities that shape our College. Food is a powerful way to bring people together, spark conversations, and honour the experiences of our staff and students. We’re delighted to see our community embracing these shared moments.”
